Crushing must begin within 2 hours of the harvest using only rollers, or a pneumatic bladder press
Fermentation must take place below 18 degrees Celsius
No animal products may be used for filtration or any other part of vinification
Wines must be bottled under screw cap
Wines may not be acidified, de-acidified or chaptalized
